New local distillery

Independent boutique gin producer Patient Wolf Distilling Co. will open its doors in Southbank this September.

The opening of the distillery will see Patient Wolf become the largest independent distillery in Victoria.

Patent Wolf, currently located in Brunswick, is known for its handcrafted gin production.

Patient Wolf co-founder and distillers Matt Argus and Dave Irwin are currently renovating an industrial warehouse at 34-36 Market St, an inner-city side street located along the border of Southbank and South Melbourne.

Patient Wolf’s new venue will provide the opportunity for Southbank residents to go behind the scenes of the distillery and take part in master classes on the distilling process.

On offer at the 30-pax venue will be seasonal drink menus that include gin and tonics as well as classic cocktails such as a gin martini or a negroni. The bar will also offer more experimental gin combinations.

The distillery will also provide Patient Wolf’s notable 220L Müller copper still.

The Patient Wolf distillery and bar will open to the public from early September 2019. Thursdays and Fridays 4pm to 8pm and Saturdays and Sundays 10am to 5pm.
